Gluten Allergy
Although food allergy options have come a long way, with many establishments now serving gluten free, dairy free, vegetarian, or vegan options, there are still only a small percentage of people affected by a gluten allergy. In fact, only 4% of people are completely gluten free for medical reasons and 10% limit gluten in general according to a 2022 civic science survey. For those that are affected by a gluten allergy, it can be difficult to find meals that do not include gluten.
Many individuals who maintain a balanced, gluten free diet rely more on fruits, veggies, and protein to receive their nutrients. UNC junior Logan Dutka shifted to a gluten free diet this year and attests that it has been a challenging transition.
“Cooking for myself is really hard because going to the grocery store, you have to find the food that compliments the meals you want to make and if you can’t, you just have to start over.” -Dutka
